Description:
I have not tried this yet but found it online and it sparked me enough to go "I think I am going to try that", I will return and let you know how it all goes.
Ingredients:
  1. 1 pkg. lemon Jello
  2. 1/2 c. V-8 juice
  3. 1 tsp. salt
  4. 1/4 tsp. paprika
  5. 1/3 tsp. sugar
  6. 2 tbsp. minced onion
  7. 1/4 c. finely chopped green pepper
  8. 1/4 c. mayonnaise
  9. 1 c. cottage cheese
Instructions:
  1. Pour hot V-8 juice over gelatin and seasonings. Cool and add remaining ingredients. Chill and serve on lettuce leaf. Use 8 x 8 or smaller Pyrex dish.

Do let us know how it goes. Is the jello supposed to be unsweetened? Otherwise, I think it'd be too sweet, but that may just be my tastes, I don't care for sweet salads.

It was a blast and I ended up doing two really. We had visitors over and both were not too much for the sweets. I did one with normal and your right it was a little on the super sweet side (something I don't like too much) then other was no sugar in it and kind of on the bland side. I am going to experiment a little more and chop the recommended dose down and see what happens.
