Simple Ham and Beans

Description:
This is a delicious ham and bean recipe that is easy to make.
Ingredients:
  1. Dry Beans, soaked overnight (I use an assortment of beans, but you can use just one or two types)
  2. Ham pieces and/or ham bone
  3. Water
  4. Ham or Chicken broth is desired
  5. Seasoning (I use Mrs. Dash)
Preparation:
  1. Check dry beans for rocks, etc, wash well and soak in water overnight.
Instructions:
  1. In crock pot, combine liquids, ham pieces, ham bone (if used) and soaked beans. If using fresh herbs as seasoning, add them now, otherwise reserve till closer to finish. Turn crockpot on high and cook till bubbly, then turn to low and continue cooking till beans are tender and ready to eat. Remove ham bone. Serve with cornbread.

I've made beans for years but have never tried soaking them over night before. I only use a crock pot now, it keeps the chance of the beans burning, because I'm not watching close enough, down. I will try it this way the next time I make a pot of beans!

Soaking them will help them to be softer and require them to cook less time. It also, according to a different post I read somewhere, helps to reduce the "gas effect" that they can cause.

I love beans and ham cooked in a crock pot and while I haven't soaked them, I have heard that it softens them. I had also heard that putting a whole potato in with the beans while they cook will take some of the gas out of the beans. I don't know if this is true though, I've never tried it.
