Picnic Panick
My family's picnic is next week. I have not a clue what to bring! If you have any ideas please share them with me. I was going to bring a cake but I just don't know! So any recipe would be a major help, Thanks!!!

How about an appetizer??
Taco salad,
cream cheese & sour cream
Salsa
Lettuce
green pepper
Tomato
onion
& Shredded Cheddar cheese served with the scoopable Nacho's
OR
Onion Dip
One tblspn of oil, I cup of onion, softened not transulent not yellow
Sour cream & cream cheese
Let onion cool
add to sour cream & cream cheese
stir together,add scallions, Left refrigerate for at least 3 hrs.
The natives wil Go crazy, ha ha

I think I'll bring a onion cucumber salad.
I Kinda remember the recipe
4 large cucumbers sliced
1 large onion cut into rings
1 container of cherry tomatoes whole
1/2 bottle of vinagar
an equal amout of water to the vinagar
5 shakes of salt & pepper
Mix everything up the night before then serve.
What about a layered fruit cake? I had one once it was good and they are easy & low fat.
1 angel food cake
vanilla pudding
seedless strawberry jam
whipped light cream
an assortment of berries
Cut cake into three layers spread jam onto bottom layer then a layer of pudding then some berries then a few spoonfulls of whipped cream. Put the next cake layer on and repeat then frost the cake with whipped cream and sprinkel with berries. (or is that too Sandra?  )
Thanks for the ideas! I really don't know what I'll do but believe me your ideas help!!!!

Jogirl, it looks like you're leaning towards bringing some kind of dessert; I love cake for dessert and I think your layered fruit cake sounds good, especially with all the fruit in season right now. If you like to bake, then maybe some type of fruit cobbler, or maybe a creme (chocolate, banana) pie or mini cream tarts topped with fruit. I'm always up for pineapple upside down cake, and there's always finger-food desserts like brownies or cookies.  I think whatever you bring, it will be great (and it'll get eaten!). Good luck!

What about a salad with a red wine viniagrette?? Or for dessert you can have lemon bars. If you want the recipes let me know. It is from Bon Appetit magazine and I have made both recipes. Both are easy to prepare and picnic friendly too.

Gotcha.....most of my friends like my muffeletta, so it's always an "expected" dish. I like to get my creative juices flowing from time to time and come up with something different and wonderful. What are you leaning towards so far? I've seen some great ideas!
