Need recipe: Stem Ginger Cookies
I bought a box of these and they are wonderful when you want something a little different -- not too sweet. I was thinking it might be fun to have a recipe so I could make my own.

DD, is Stem the brand name? Are you looking for ginger cookies? I've probably got a recipe somewhere since I've got about 20 cookbooks. I'll take a looksee and post later if I do.

The cookies were made by Walker Shortbread. They're kind of chewy, not crisp like a ginger snap, and have small pieces of candied ginger in them. I think stem ginger might just be another name for candied ginger.

DD, does this look like the right ingredients?
I found it on www.cooks.com
CANDIED GINGER COOKIES
3/4 c. butter
1 c. sugar
1 egg
2 1/2 c. flour
2 tsp. soda
1 tsp. cinnamon
1 tsp. cloves
1/2 tsp. salt
1/2 c. chopped candied ginger
Mix in order given. Chill. Roll into balls and flatten with bottom of glass dipped in sugar. Bake at 350 degrees for 10 minutes.

joes, that looks about right, except I think I might try 1/2 brown sugar and 1/2 white, or maybe all brown. I'll let you know how it goes.
