My New Pan
I got the new pan today, and the small cannister I ordered to get free shipping.
This is a top flight pan, in case you didn't see my post. It is an 8 1/2 QT calphalon Professional hard anodized saucier w/lid. This is a retail $180, I got it for $19.89 on amazon. It may still be going on so click the link I gave, just scroll through this forum. This pan is gonna be great for all sorts of uses. A dutch oven, simmering, browning, searing, sauting you name it. I think I'm gonna make from scratch veg beef soup first, this saturday. I mean from scratch too, starting with beef bones roasted in the oven.
This past year is the first time mom has ever seen really good cookware in her life. She has always just had cheap crap, and although very knowledgeable in the cooking arena, never got into it. She looks at it and says what are you gonna do with it? I say, cook stuff.
On the other hand she got excited when a little while later ups showed up again to deliver the piece I ordered to get free shipping. A small Royal Doulton porceline cannister. It was really cute and pretty so she could display it. Go figure.

I have several Calphalon pans and love 'em all. I bought them back before Emeril was endorsing them. I have 3 sized saute pans and a wok pan. I would dearly love to get more of them but they're out of my financial reach at the moment. What I'd really love to get is one of their soup cauldrons.
Davey, good luck with your veg beef soup from scratch. I make mine the same way, roasting the bones in the oven. What's in your soup? Mine has the bean mix from a 16-bean soup mix (minus the seasoning packet of course) plus green and yellow dried peas and barley. The secret of the soup, besides the huge amount of chunked beef I put in it (because I love a big piece of beef in every bite, don'tcha know) is to put a peeled sweet potato in the soup and cook it until it is soft all the way through. Then the sweet potato is fished out and mashed up and returned to the soup mixture. My soup is so thick it could pass for stew! Sometimes I have to thin it out a bit by adding a little water.
I served this soup in a crock pot at a post-Christmas party I had a few years ago, and it won RAVES. Not only did everyone come back for seconds, they came back for thirds! My daughter told me she had eaten 4 bowls all by herself. A real neat way to serve this soup for a party is to purchase, throughout the year, mugs at tag sales and thrift shops. Use the mugs to serve the soup, this way you don't have to worry about getting a whole lot of bowls. Much easier and more interesting.

Dave, I got my pans as well. What a deal. Bought one for me and one for a friend for Christmas. Thanks so much for posting the link. I need to keep checking that site since they sometimes have some amazing ideas.

Dave if you didn't notice the Calphalon Professional non-stick 10" omelet fry pan is on sale for $16.89. I have two of these and love them.
