Leftover-Chicken Casserole

Description:
Looking for something to do with your left over chicken (or turkey)? Here's something easy that will please your family's palate.
Ingredients:
  1. Chopped cooked chicken, about 1.5 cups
  2. 3 cups frozen vegetables
  3. 1 family size can of cream of mushroom soup
  4. 1 prepared recipe of drop biscuits
Preparation:
  1. Prepare a recipe for drop biscuits
Instructions:
  1. In a medium saucepan, heat the veggies on med-low until warm, add the soup and the chopped chicken, mix well and heat through. Pour into a casserole dish or 13x9 baking pan, top with the prepared biscuits, dropping on top by the tablespoonful. Bake at 425 until the biscuits are slightly browned on the top.

This sounds very interesting, a very easy way to use up extra chicken. I will keep this in mind whenever I have chicken I need to use up.
