Hey Swish and Muffy are you out there?
Hey Everybody hows it going? I had to re-register and I'm RenaM but I'm still Rena. I had a great Holiday hope you did to! I sold alot of my chocolate this year. I put out a price list and to my surprise I had a lot of people said they wanted chocolate. So I was very busy making caramels, marshmallow and toffee as well as truffles of course. My toffee didn't do to well. Only 1 out of 4 batches came out. Do you have any suggestion on how to make great toffee? Hope all is well and would like to here froml you Muffy and Swish. Muffy how is your business coming along.? and Swish how is yours?

I'm going to the Fancy Food show again on Jan 22 in San Fran.

Hey Rena, As always glad to see your post. I'm also glad to hear you did well with holiday orders. You must have been very verybusy making the marshmallow, toffee and truffles.
I had a very busy and exciting fall and Christmas season. My son was married in Atlanta this past Oct. My daughter and son-in-law (that live here in VA) adopted a 2 year old little boy (Aleksey) from Russia; also in Oct. My hubby and I feel very blessed.
I had a verrry busy Christmas season. I'm glad for all the business but I'm glad it's over. I had a very large order for a company and I really don't think I would have finished on time if my hubby had'nt volunteer to package lots of the order.
Rena I don't make toffee so I can't help you there.
This board sure has been silent since the fall. I guess people are still trying to catch up from The holidays. I still don't have all the decorations put away yet.

I don't know what recipe you are using but Gale Gands works. Hope that helps you.

Toffee
Thanks Swish and Congrats on the marriage and your new grandson. Swiish, how did you get your business going? Do you have a shop or is it all on the internet. What's the website I would like to see it if you have one. Sorry for all the questiosn. Starting out is very over whelmeing all that has to be done. Get Liecense. a Business Plan , Insurance, a Loan, then I have to find a place. I wonder if it's all worth it I know it will be in teh long run. What kind of chocolate do you use. I used Guittard this past holiday season and was quite surpriese at how good it was. I melt down to a thin consistancy so it make moulding chocolate better. I can't use Barry Callebut it's too thick for molds for me. I've been using my 'Little Dipper' (thanks muffy) and I just love it. It's a tropper. Have you expiremented with different color coaco butters to use a decoration.?...
