Ham and Cheese Grits Souffle

Ingredients:
  1. 3 cups water
  2. 3/4 cup quick-cooking grits
  3. 1/2 teaspoon salt
  4. 1/2 cup (2 ounces) shredded mozzarella cheese
  5. 2 ounces ham, finely chopped
  6. 2 tablespoons minced chives
  7. 2 eggs, separated
  8. dash hot pepper sauce
Instructions:
  1. Preheat oven to 375 degrees.
  2. Grease 1 1/2 quart souffle dish or deep casserole.
  3. Briing water to boil in medium saucepan. Stir in grits and salt. Cook, stirring frequently, about 5 minutes or until thickened. Stir in cheese, ham, chives, egg yolks and hot pepper sauce.
  4. In small clean bowl, beat egg whites until stiff but not dry; fold into grits mixture. Pour into prepared dish.
  5. Bake about 30 minutes or until puffed and golden.
  6. Serve immediately.
  7. Makes 4 to 6 servings.
