Crockpot Chicken Tortillas

20 minutes to put together and 6-8 hours to cook

Description:
Mexican dish for the crockpot
Ingredients:
  1. Meat from 1 whole chicken
  2. 1 can cream of chicken soup
  3. 1/2 c. green chili salsa
  4. 2 TBSP quick cooking tapioca
  5. 1 medium onion
  6. 1 1/2 c. grated Monterey Jack cheese
  7. 1 dozen corn tortillas
  8. Black olives
Instructions:
  1. Tear chicken into bite size pieces and mix with soup, chili salsa, and tapioca
  2. Line bottom of crockpot with 3 corn tortillas torn into bite size pieces
  3. Add 1/3 of the chicken mixture
  4. Sprinkle with 1/3 of the onion and 1/3 of the grated cheese
  5. Repeat layers of tortillas topped with chicken mixture, onions and cheese
  6. Cover and cook on low 6-8 hours
  7. Garnish with sliced black olives

This recipe looks delicious! My husband loves Mexican and I love to come home after a day of work and have dinner ready to go in the crockpot. I bet it would be even better with a couple of spoonfuls of sour cream on top!

Oh I will have to try this recipe! I love to find "different" Crockpot recipes. Mine tend to all be the same and I get so bored with it! I think I have had something similar to this but it was made as an oven casserole.

That does sound good! I love Mexican food, we tend to eat it a lot! Plus, I love cooking with my crockpot. I bet it would taste better with sour cream. One thing I'm wondering though is does the tortillas get too soggy this way?
