I have been on a quesadilla kick lately for breakfast. I don't think there is anything for breakfast here but that would be a good idea.

Good idea there. Sometimes I get up in the mornings and am so blank as to what I'm going to do for breakfast. It gets worse when having made up my mind, the kids holler out, "not that AGAIN".

I like this idea. I'd love to find some new breakfast recipes and have a few killer ones to share, so I think there would be plenty to fill such a category.

This morning I tried this awesome blueberry and pecan pancake recipe I recently found. A little real maple syrup on top and they were delicious. Yes, we definitely need a breakfast recipe section so all can share!

I have a few, but they're more like "Brunch for Two" recipes, like Huevos Ranchero Supremo, Strawberry Cream Cheese Blintzes, and Monte Cristos, including related adult and chilren's style beverages. Kinda busy with the move yet, but I will post them as soon as I get the chance.

I cant wait, you had me at "Strawberry Cream Cheese" thats all I needed to know. Breakfast types are sometimes hard for me. I am never really motivated in the morning even by good food.

I have to admit I would eat the same couple things over and over for breakfast if I could. Unfortunately its hard to get other people to try scones and clotted cream most days. Its my one true weakness along with stuffed french toast (with cream cheese and strawberry jam). Neither is very weight friendly either though.

HUEVOS DEL RANCHO SUPREMOS


Ingredients (for 2)

4 small oe two large corn or flour tortillas
4 Tbs butter
1 can of your favorite WHOLE beans.( No refried beans please. That's gross!)
4 eggs
1/2 pound Mexican chorizo (store bought, or see recipe below)
1 cup shredded sharp cheddar cheese
1 cup of your favorite salsa
1/2 cup sour cream
1/2 cup guacamole

Place beans in a saucepan on medium heat. Thoroughly cook chorizo in frying pan, then add to the beans, mix well, and keep warm on low heat. Melt 1Tbs butter in cast iron skillet or frying pan. Heat each tortilla in skillet until lightly brown on both sides, adding 1Tbs butter for each tortilla. Place two tortillas side by side on each plate. Spoon half of bean/chorizo mix over both tortillas. At the same time, place two eggs in a second frying pan with lid and keep lid on until eggs have a light white coating on yolks. Gently place eggs on top of beans, sprinkle 1/2 cup cheese on eggs, add 1/2 cup salsa on top of cheese, and garnish with sour cream and guacamole. Serve with Mexican style rice and small salad with favorite dressing, or a tropical fruit salad, and a Jennifer's Kiss cocktail (see below).

Chorizo

2 cloves mashed garlic
1 teaspoon salt
1 tablespoon vinegar
2 tablespoons chili powder
1 teaspoon paprika
1 teaspoon salt
1 1/2 pounds ground pork
2 Tbs cooking oil of choice (for frying)

Mix everything together in a bowl, then fry in the oil oil until brown. If you like it extra spicy, use New Mexico chili powder.


Jennifer's Kiss (Sweet, bubbly, and slightly intoxicating)
Two 13-ounce Libby's wine goblets
One 12 ounce can of Kern's Strawberry Nectar
One bottle of Ballatore Rosso (Red) Spumante
Sliced fresh strawberries

Divide strawberry nectar between the two goblets. Pour Spumante directly down the center of the glass until almost full. Garnish with sliced strawberry.
