Blueberry Muffins

2 cups all purpose flour 1 and 1/4 cups sugar 2 tsp baking powder 1 to 2 tsp ground nutmeg Dash salt 2 eggs, lightly beaten 1/2 cup butter, melted 1/2 cup buttermilk 1/2 tsp vanilla extract 2 cups fresh blueberries In a bowl, combine flour, sugar, baking powder, nutmeg and salt. Combine eggs, butter, buttermilk and vanilla; stir into dry ingredients just until moistened. Gently fold in blueberries. Fill greased or paper-lined muffin cups two-thirds full Bake at 375 for 20-25 minutes or until muffins test done. Cool in pan 10 minutes before removing to wire rack.

That does seem like a good breakfast idea. I take it you make them the night before and keep them sealed up for the next morning? I'm not sure how I feel about waking up to bake stuff though.

I have found that, if you freeze the blueberries, then add them to the batter, they will thaw while baking, and not give the batter a blue tinge.

This sounds like a nice, easy one. I too would have to do it the night before because my mornings are crazy and I'm usually in a mad rush.

I had blueberry muffins for breakfast morning. They were nice, but store bought, so I didn't get the satisfaction of eating the fruits of my labor.

Do your blueberry muffins normally turn out really nice or you only give it to those close to you for fear of embarassment? Sometimes I do that.
